Pair classic creamy Green Goddess dressing with Aussie lamb for a fresh, satisfying salad.

Ingredients

For the Aussie Lamb

  • 1 lb Aussie lamb loin
  • 2 tbsp All-Purpose Lamb Rub

For the Salad

  • 12 cups romaine lettuce, washed and chopped
  • 1 avocado, sliced
  • 4 hard-boiled eggs, diced
  • 1½ cups tomatoes, diced
  • 1½ cups roasted corn
  • 1½ cups cucumber, diced
  • ½ cup feta cheese, crumbled
  • 4 tbsp fresh mint, chopped
  • ½ cup Green Goddess dressing

Method

To cook: Preheat the grill to 450°F. Evenly coat the lamb loin with the All-Purpose Lamb Rub. Grill for about 6 minutes, turning every 2 minutes, or until cooked to your desired doneness. Allow to rest for 5 minutes before slicing into thin strips. Set aside.

For the salad: In a large bowl, toss the romaine with the Green Goddess dressing. Divide evenly among 4 chilled plates. Top each salad with ¼ avocado, 1 diced hard-boiled egg, 6 tbsp diced tomatoes, 6 tbsp roasted corn, 6 tbsp diced cucumber, 2 tbsp crumbled feta and 1 tbsp chopped mint. Top with the sliced grilled lamb and serve.
