Lindsay O'Neill Sneaky Mama Aussie Grassfed Beef Meatballs

Lindsay's famous Sneaky Mama Mini Meatballs. So tasty, the healthy part surprises you! Using grassfed beef, these are gluten free, served in Sneaky Mama Marinara sauce that's loaded with organic veggies. Eating right never tasted so good!

Ingredients

Meatballs:

  • 2 lbs Australian Grassfed ground beef
  • 1 cup parmesan finely grated
  • 1 large egg
  • 1 cup gluten free bread crumbs
  • 2 teaspoons of dried Italian Seasoning
  • 6 cloves of garlic pressed/minced
  • 2 teaspoons of salt
  • 2 tablespoons Sneaky Mama Sauce, recipe follows

Sauce:

  • 106 oz can crushed tomatoes or whole peeled San Marzano tomatoes
  • 1 cup organic carrots
  • 1 cup organic zucchini
  • 1 cup organic squash
  • 1 large organic yellow beet skinned and chopped
  • 1 Vidalia onion chopped
  • 2 tablespoons of each (fresh) basil & parsley leaves
  • 2 tablespoons of dried oregano
  • 2 dried bay leaves
  • 6-8 cloves of garlic pressed
  • 4 teaspoons of salt
  • 2 tablespoons good olive oil

Method

Meatballs:

  • Preheat oven to 350 F.
  • In large bowl mix together the parmesan, bread crumb and seasoning.
  • Then add in the meat, sauce and egg and combine well.
  • Use ice cream scoop to evenly scoop out balls, roll and place on baking sheet.
  • Bake for 12 minutes, then place them in the sauce to cook for another 10 minutes.
  • Garnish with basil or microgreens.

Sauce:

  • In large pot heat olive oil over medium heat, then cook onion with 2 tsps of salt until translucent and starting to brown. Add in garlic and reduce heat. Stir.
  • In large pot add in tomatoes and fresh & dried herbs and use immersion blender to blend together.
  • In medium pot place veggies and cover with water just to the top. Add two bay leaves, cover and bring to boil and reduce to simmer until veggies are cooked. Strain – leaving ½ cup of the water and remove bay leaves.
  • Combine veggies into sauce and blend well. Can add more salt as needed.
