Ingredients

Aussie grassfed Flank Steak
Your favorite steak marinade
Whole grain Dijon Mustard
Chimmichurri
Petit Breakfast Cheese or Mild Brie or Goat Cheese
Grilled Baby Zucchini
Steamed Baby Asparagus spears
Grapes
Figs
Pears
Arugula
Walnuts
Baguette
Capers
Honey
Fresh Thyme

Method

To prepare steak, marinade flank steak in your favorite marinade blend of choice for 4 hours in the fridge. If desired, steak can be marinaded overnight, then sous vide cooked for easy tailgate finishing the following day!

Remove steak from marinade and seal in a freezer bag or vacuum bag. Set sous vide to 125 F and cook steak for 1 hour. This can be done the night before tailgating. Just refrigerate steak and place in a cooler to bring with you to the game. Remove steak, pat dry and grill for 3-5 minutes on each side for desired color (and flavor). Slice into thin pieces for easy snacking.

Note: If not using a sous vide method, after marinading steak, continue to grilling, checking with an instant read internal thermometer to ensure desired doneness is achieved.

To Serve:
Place steak on the center of the grazing board, slicing as needed. Add your ‘rounds’ to create visual anchor points on the board (sauces, cheese, etc). Place clusters of additional grazing board ingredients around the steak. Drizzle honey over the cheese, and figs if desired. Garnish with fresh herbs, and tuck additional herbs throughout the board.
