MLA Grilled Aussie Sirloin, Quinoa & Pistachio Salad

Getting in shape and having the energy to do it all calls for a delicious solution like grilled Aussie grassfed sirloin with nutrient-packed quinoa and pistachios.

Ingredients

For Aussie Beef

  • 1⅓ lb Aussie Grassfed Sirloin Steak, Trimmed
  • 2 tsp Smoky Barbecue Seasoning
  • 2 tbsp Olive Oil, Divided

For Quinoa & Pistachio Salad

  • 2 cups Cooked Quinoa
  • ½ cup Fresh Mint Leaves
  • 1 cup Flat-Leaf Parsley Leaves
  • 2 tbsp Pistachios, Roughly Chopped
  • 1½ tbsp Lemon Juice
  • Zest of 1 Lemon
  • Salt and Pepper, To Taste
  • Watercress

Method

For the Aussie sirloin: Preheat a ridged chargrill or barbecue to moderately high heat. Brush the steaks with a little olive oil and rub well with the barbecue seasoning. Cook for 2 minutes on each side, or until cooked to your preferred doneness. Set aside on a plate, loosely cover with foil, and rest for 5 minutes.

For the quinoa and pistachio salad: Mix the quinoa with the herbs, pistachios, lemon juice, lemon zest and remaining olive oil. Season with salt and pepper.

To serve: Slice the steaks and serve with the quinoa salad and dressed watercress.

Tips: 

  • For a variation, try replacing the quinoa with couscous, brown rice or pasta. 
  • Try adding a handful of tinned chick peas or lentils to the quinoa.
