MLA Grilled Aussie Beef Caesar Salad

Don’t sleep on steak salad! It’s a delicious way to enjoy high-quality protein and eat your greens. Warm, tender grilled Aussie grassfed beef meets a cool, creamy Caesar salad for the perfect summer fling.

Ingredients

For Aussie Beef

  • 1 lb Aussie grassfed strip loin, ribeye or tenderloin steaks
  • 3 tbsp balsamic vinegar
  • 3 tbsp olive oil
  • Coarse salt and freshly ground pepper, to taste

For Dressing

  • 1 tsp Dijon mustard
  • 1 tbsp lemon juice
  • 2 tbsp extra-virgin olive oil
  • 2 tbsp plain yogurt or buttermilk
  • 2 tbsp grated Parmesan cheese
  • ½ tsp anchovy paste, optional
  • A few drops Tabasco, optional

For Salad

  • 2 heads romaine lettuce, trimmed to the hearts with leaves separated and chopped
  • 2 slices prosciutto, sliced and fried until crisp
  • ½ cup croutons
  • Grated Parmesan cheese, for garnish

Method

Combine the balsamic vinegar and olive oil. Brush half over both sides of the Aussie beef. Season to taste with salt and pepper. Allow the Aussie beef to rest for 10 minutes at room temperature.

Preheat the grill to medium-high and sear the Aussie beef for 3 to 5 minutes on each side for medium-rare, depending on thickness, or until cooked to your preferred doneness. Brush the Aussie beef with the reserved vinegar and oil mixture during grilling. Transfer to a board and let rest for 5 to 10 minutes before slicing diagonally.

Whisk together the dressing ingredients and toss with the romaine lettuce leaves to coat. Arrange the leaves on plates or a platter and scatter the crispy prosciutto pieces and croutons over the top.

To serve: Arrange the Aussie beef over the lettuce leaves and garnish with additional Parmesan cheese.
