1 pound ground Australian grassfed beef 1 red onion, finely chopped 1 large carrot, finely chopped 2 celery stalks, finely chopped 2 garlic cloves, crushed 2 Tablespoons tomato paste 14 ounce can diced tomatoes 1 Tablespoon extra virgin olive oil 2 Tablespoons thyme leaves 1 cup beef stock 1/3 cup basil leaves, torn

Heat oil in a large non-stick skillet over medium-high heat. Add onion and cook for 5 minutes until softened.
Add garlic, carrot and celery and cook for 2-3 minutes.
Add beef and cook for 5 minutes or until browned.
Add tomato paste, tomatoes, thyme, and stock and bring to a boil.
Reduce heat and simmer for 10-12 minutes or until sauce has thickened to your desired consistency.
Season to taste and stir in basil leaves.
