Take your burger game up a notch with these flavorful Aussie Wagyu burgers featuring a red wine-shallot reduction.
Boil the wine and shallots in a medium saucepan until reduced by half, 20–30 minutes. Add 1 tablespoon butter and the brown sugar; whisk until the butter melts and the sugar dissolves. Remove from heat. Mix in the remaining 2 tablespoons butter. Set aside.
Prepare the grill for medium-high heat. Mix the Aussie Wagyu, Worcestershire sauce, salt, pepper and ¼ cup wine-shallot mixture in a bowl. Form the Aussie Wagyu into four burger patties. Grill the burgers until brown on the bottom, about 3 minutes. Turn the burgers and brush with additional wine-shallot mixture. Continue grilling until cooked to the desired doneness, turning and brushing occasionally with the wine-shallot mixture, about 4 minutes longer for medium-rare. Top each burger with a slice of cheese and remove from the grill.
Grill the buns, cut sides down, until lightly browned. Top the bottom buns with the burgers, then the tomato slices and lettuce. Cover with the top buns and serve immediately.
