MLA Aussie Wagyu Bolognese

A good bolognese is so much more than just a pasta sauce. The classic savory combination of lean, high-quality protein, veggies and tomato is a foundation for all sorts of meals to keep the weeknights fresh and new.

Ingredients

  • 1 lb ground Aussie Wagyu
  • 1 red onion, finely chopped
  • 1 large carrot, finely chopped
  • 2 celery stalks, finely chopped
  • 2 garlic cloves, crushed
  • 2 tablespoons tomato paste
  • 1 (14-ounce) can diced tomatoes
  • 1 tablespoon extra-virgin olive oil
  • 2 tablespoons fresh thyme leaves
  • 1 cup beef stock
  • ⅓ cup basil leaves, torn

 

Method

Heat the oil in a large nonstick skillet over medium-high heat. Add the onion and cook for 5 minutes, or until softened.

Add the garlic, carrot and celery, and cook for 2-3 minutes.

Add the Aussie Wagyu and cook for 5 minutes, or until browned.

Add the tomato paste, tomatoes, thyme and stock, and bring to a boil.

Reduce the heat and simmer for 10-12 minutes, or until the sauce has thickened to your desired consistency.

Season to taste and stir in the basil leaves.
