Place the ground Aussie Wagyu in a bowl and mix with a little oil. Heat a large frying pan.
Crumble half of the Aussie Wagyu into the pan and brown, breaking up any lumps with a fork. Transfer to a bowl, reheat the pan and cook the remaining Aussie Wagyu. Add it to the bowl and set aside.
Add the remaining oil to the pan. Add the onion, garlic and mushrooms, and cook until softened, taking care not to burn the garlic. Sprinkle in the flour and stir well. Return the cooked Aussie Wagyu to the pan, then add the mustard, tomato paste, wine, stock and thyme leaves. Stir well, scraping up any browned bits from the bottom of the pan.
Bring to a boil, reduce the heat and simmer for 20-30 minutes, or until thickened.
Preheat the oven to 425°F. Divide the mixture evenly among four 1½-cup ovenproof dishes. Cover each with pastry, pinching the edges to create a frill. Brush with egg yolk and bake for 10-15 minutes, or until the pastry is golden brown.
Serve with green vegetables.
